I have only cooked 2 briskets since I built my UDS. You need a crowd to justify cooking a brisket and most of my crowds are Filipinos and they wouldn't know what to do with a brisket. Both briskets came out great. My first one had the best smoke ring and the second one was tenderized with a salt rub that made it unbelievably tender. I am confident that I can cook 6-8 briskets at a time with the same results. I'm no longer in Texas, so there is not much demand for brisket up here in Illinois.
